2 c Flour ½ tsp Salt 4 tsp Baking Powder 1 Tbsp Sugar ½ c Vegetable Shortening (Crisco) 2/3 c Milk (or Buttermilk) if buttermilk is used, add 1/2 tsp of Baking soda and cut the amount of baking powder in half. |

Preheat oven to 425 degrees. Grease two 8 inch cake pans. Put the flour, salt, baking power and sugar in a bowl. Cut in the shortening with two knives of a pastry blender. Until the mixture resembles course meal. Add the milk all at once. and stir just enough for the do to form a ball around the fork. turn the dough onto a lightly floured board and kneed 14 times. Pat until half inch thick. Cut into rounds with a 2 inch cookie cutter. Place touching each other into the cake pans and bake for 15-20 min.
for cheese biscuits, add 1/2 c grated sharp cheese to the dry ingredients
for Drop biscuits, make as above except increase milk to 1 c and drop from a spoon onto a greased pan. |
